Combine a menu focused on the cuisine of Denmark and Holland with a wine list heavy on Austria and Germany. Throw in some Belgian beer and aqauvit-based cocktails. Shake well. Serve in an ultra cool, modern environment. Oh, and call it Vandaag, a restaurant inspired by the all things northern Europe.

As mentioned, the winelist draws from Austria and Germany – actually, almost entirely from Austria and Germany, excepting a couple bottles from Champagne, which we’ll include under the auspices of northern Europe…for the fun it.

As one might expect, the list is skewed toward the world of white wine. Count on plenty of Reisling and Gruner Veltliner, but don’t neglect the light, fruity, spicy and intense Zweigelts and Spätburgunder (aka Pinot Noir.)

Bonus: Over half the list is available by the glass, including the entire selection of reds.
